Sweet black cherry nose. Aristocratic, confident and full of impact but without the surly face of the Kammerberg. Luscious dark fruit, assertive tannins, boldly spiced, this is Spätburgunder with a bit of a Rhône swagger. (Tamlyn Currin – JancisRobinson.com)
On the nose there is an aroma of sweet wood, raspberries, forest berries, black tea and earthy woodland. On the palate it is dense but fine, elegant and juicy with good length and structure. Very good ageing potential. Named after a former cloister, south facing vineyards of stoney chalk soil with a little loam/clay surface. The grapes were hand harvested, de-stemmed and then fermented in open top oak-fermenters and the so called “Cuves” and punched down by hand. After fermentation stored in Barrique. The wine was never fined or filtered.
