Wine: To achieve supple texture and ripeness, 50% of the base wine was matured in large wooden barrels and underwent biological acid decomposition. This was followed by a second fermentation and yeast contact for at least 12 months during which carried out a baton age (stirring of the yeast) twice a week for 10 months. This gives the sparkling wine a fine perlage.
