The tannins imbue the wine with a silky tension while still bringing a wonderful rubbed-bark texture. Deeply savoury but with the fruit is rich and supple. Wine: A bouquet with aromas of sour cherries and vanilla. On the palate it radiates pure elegance, appears firm and reminds of flint. The fine salted caramel notes round off the long finish.

Vineyard: VDP.Gorsse Lage designates the highest quality vineyard sites in Germany. Here the best wines grow with a complex taste, expressive character and special maturity potential. The sites are carefully defined and narrowly demarcated into parcels by the VDP regional associations. The Höllenberg vineyard was mentioned as early as 1339 as the "an Der heldin." Linguistically, in this context, the German word "Hölle" doesn't have anything to do with hell but rather designates elevated piles, that is steep slopes. Quartzite, Devonian and phyllite slate create the ideal conditions for elegant Spätburgunder wines. Their vines in this best piece are 50-60 years old.

Idea: Low yields, ideal soil conditions and an early harvest are the pillars of a great Spätburgunder. The fermentation on 10% of the stems gives the wine fine phenolic textures. To capture the power, we mature the wine in first and second use barrique barrels. After 18 months in the barrel, the wine is bottled unfiltered.

Food recommendation: Pan-fried or stewed - always the ideal option with venison, deer or beef. Surprising with monkfish roasted in aromatics with porcini risotto.
