Baden
Baden is a wine universe. More than a third of its a.39,300 acres) are planted with Spätburgunder; and Weissburgunder, Pinots account for more than half of all vines. Those from top sites are qualitatively on a par with their international counterparts. Riesling and Silvaner also thrive here. The regions slim strip of vines stretches some 400 km (c. 250 miles) from the upper Rhine plain to the border with Switzerland. Baden is Germany’s warmest and sunniest region, with a climate as Mediterranean as its culture and lifestyle.
Further south, between the Black Forest and Rhine meadows, lie the Ortenau district and terraced valleys of the Breisgau district. The ridges of the Kaiserstuhl (an extinct volcano) and Tuniberg (chalky hills covered with loess) draw near the Rhine. The mild climate, its varietal makeup, and diverse soils glacial deposits (moraine), limestone and shell limestone, coloured marl, clay, loess deposits, weathered granite, and soils of volcanic origin make Baden a land of great wine discovery.

Our single vineyard Ihringer Winklerberg is an ideal terrain for Riesling, generally acclaimed the “king” of white wine varieties. The volcanic soil of this site delivers the minerality that is needed to develop the fruity and complex bouquet.
The salty, mineralic bouquet shows hints of candied lime, green apples, star fruit and peach skin. This wine has a striking backbone and is full of character on the palate and has a remarkably dense texture. Balanced weight and restrained alcohol contend coat the fine mineralic acidity. A savoury aroma of citrus fruit compote evolves on the palate. Noble Finish of delicate presence and with hints of lemon mousse. A superb wine along with poached or pan-fried fish dishes, crustaceans, light meat and pasta.

The remarkably rich and juicy bouquet is full of volume and shows flavours of mirabelle tarte, bananas, starfruit and bruised yellow apples. The density and juiciness continues on the palate. The voluminous body emanates an aroma of citrus fruits compote and is structured by a delicate and neatly integrated acidity. A mineralic backbone is detectable beneath the fruit. There is an extraordinary presence of fully ripe tropical fruits and a delicately creamy texture in the finish. An ideal wine along with roasted or grilled fish, crustaceans, veal or chicken dishes, and pasta.

A concentrated, mineralic and savoury bouquet of fully ripe mirabelle and starfruit, dried apricots, and finest hints of vanilla and marzipan. The juicy raciness in the attack leads over to a dense but firmly structured body. The aroma of honeydew melon and yellow plums is backed by a striking spiciness and mild acidity. Warmth, spiciness and fruit characters such as mango, greengage and a creamy nuttiness are evolving towards the long-lasting finish. This Grauburgunder combines a powerful juiciness with a vital and savoury core. An excellent wine along with grilled fish, savory roasts, chicken and feathered game, as well as with hearty Mediterranean fare. Also a good recommendation for mild cheeses, spicy titbits, or tapas.

Chardonnay from the Ihringer Winklerberg site is marked by an extraordinary minerality that only can occur on a soil of weathered volcanic rock. This gives the wines, in addition to their power, elegance and finesse. This wine has been fermented in barriques and was aged in small French barrels.
The savoury bouquet of roasted almonds, baking spices and melon peel is backed by a striking mineralic smokiness. Both juicy and fresh on the palate. A fine and notably mineralic acidity structures the fruity body with aromas of yellow plums, Golden Delicious apples and a hint of tropical fruits. Towards the finish, the noble wood spices become more prominent. Gorgeous freshness, vitality and hints of young apples and citrus fruits in the finish. A striking Chardonnay, very obviously marked by the noble terroir. An ideal wine along with roasted or grilled fish, hearty roasts or Mediterranean fare. Equally good with various cheeses.

The typical ruby red indicates a classical Pinot noir. In the nose we find aromas of ripe plums and dark cherries which are on the palate combined with a hint of liquorice. Along with the well balanced structure go herbal notes of thyme, the silky tannins pierce the long lasting finish. A very elegant and charming Pinot noir.

The tightly woven bouquet initially shows the extraordinary noblesse of this wine: Highly complex and dense but transparent in the bouquet of wild cherries, red plums, spicy raspberries and black truffles. On the palate this wine shows the levitating richness that only a good pinot can deliver. Under a velvety coat a remarkable minerality can be found, freshing up the savoury aroma of spiced cherries, roast damson and mahogany. Structured by remarkably fine tuned and silky textured tannin. Awesome fruit intensity but without any heaviness, and with veins of lively, stimulating acidity. In the finish, the terroir character with its slightly smoky minerality comes up again, aligned with hints of black pepper and pickled cherries. Resemble to a Morey-St-Denis in style.

The profoundly fine-linked bouquet develops notes of dark cherries, berry compote and sloes, enriched with a discreet top note of milk chocolate and fully ripe strawberries. The nose is solid and dense, but at the same time clear and transparent. On the palate with fragrant, expressive and virtually floating aromatics. Despite the intensity wonderful clear in its composition: Nothing is overdone but everything is so present. A brilliant acidity and a very fine, perfectly balanced tannin structure build a vital framework. The complex fruit on the palate shows rosehips, dark raspberries and red plums. Towards the finish with additional hints of preserved cherries. The perfectly integrated wood adds a discreet piquancy. A generous Pinot with a mineralic heart, transparently structured and with extraordinary balance.

A delicious aroma of spicy cherries, wild raspberries and a touch of mocha is evolving, everything tightly woven around a mineralic and literally aristocratic core. The rich complexity in the nose is showing an almost baroque-ish fruit expression of red currant, sweet cherries, sloe, dark forest berry compote and fine hints of spices. Overwhelming, widely fanned-out fruit expression also on the palate. The dense body is structured with filigree acidity and is vitalised by a lovely freshness. The remarkable velvety tannin is coating a mineralic core that has a firm backbone and pleasant warmth. On the palate with an aroma of berry compote and dark plums. Rich and expressive but nevertheless also marked with balance, freshness and juicy elegance. Warmth, spiciness and fruit characters such as sloe liqueur and fully ripe red apples are evolving towards the long and rich finish. A perfect partner with sophisticated meat dishes, especially when herbs or roast aromas play a major role. Equally good with game and various types of savoury cheeses.
